ReplyDeleteMy family and I have been part of a local CSA for the past couple of years and we, too, love it! It's so fun going to pick up our box and seeing what goodies are inside ^.^
ReplyDeleteAs for eggplant, I've not attempted to make anything with it (yet), however you can never go wrong with a good grilled eggplant!
I always love egg plant parm. Hubby made sandwiches last week, eggplant sauteed a couple of minutes each side till brown, slices of tomato, red onion,and spinach leaves on wheat, pan toasted with dijon mustard. Pretty tasty.

ReplyDeleteThat is the one recipe that we use over and over again for eggplant! We love it too! We also serve it over whole wheat organic spaghetti. So good - I will have to try the sandwich, thanks for the tip.

ReplyDeleteI love that you are getting strawbeerries and tomatoes in January. I subscribe to a CSA in San Diego and we are getting tons of leafy greens and root veggies right now...can't beat the oranges though.
